1 bag frozen broccoli thawed and chopped or fresh bunch steamed and chopped
1 can cream of ---- soup of your choice
1 cup mayo
2 sleeves of crackers, crushed
8 oz. shredded cheddar cheese
salt and pepper to taste
1/2 cup chopped onions
Italian bread crumbs

Prepare broccoli, rinse in cool water or set in refrigerator to cool. In large mixing bowl add all ingredients together except bread crumbs. Put mixture in casserole dish and top with a thin layer of bread crumbs. Bake at 350º F for 30 minutes. If bread crumbs not toasted, broil till lightly golden brown.

I prefer cream of celery, mushroom, or chicken. I use whatever crackers are in the cupboard. If your broccoli is too hot when you add the cheese, the cheese melts and makes it too hard to mix. I got this recipe from Sarah Purcell (remember "That's Incredible" TV show?). I made it for Thanksgiving and everyone loved it, now I've been making it ever since for over 20 years. I'm the only one in the Maxwell family that is allowed to make it for Thanksgiving dinner.
