16oz Elbow Macaroni
1/3 C. Flour
1/2 C. Butter
4½ C Milk
2 Eggs
18 oz. Shredded sharp cheddar cheese or combine other favorite cheeses (Gouda, Monterey Jack)
1 tsp Salt


Directions:
Directions:
Cook macaroni according to directions, drain and set aside.
Meanwhile, melt butter in a saucepan and add flour and salt stirring and adding milk gradually – stirring continuously until thickened.
In separate small bowl, slightly beat eggs and then slowly add in some of the warm white sauce until eggs are incorporated into the sauce at a warmed temperature.
When pasta is done, drain but do not rinse.
In a casserole dish, layer a third of the macaroni, cheese then sauce and repeat with the next layer of macaroni, cheese, sauce etc etc. Lastly – top with shredded cheese.
OPTIONS -Using different cheeses can make a great change – use half sharp cheddar and half Gouda or one of your favorite other cheeses. Add diced ham and sliced green onions for a main course.
Bake at 350 º for 35-45 minutes or until golden
