olive oil
3 garlic cloves, crushed
1 ½ cups white wine or tomato juice
6 T. tomato paste
1T. paprika
1½ tsp. dried thyme
salt and freshly ground pepper
5 to 6 lbs. any white fish
¾ cup black olives
1 lemon thinly sliced for garnish

Preheat oven 350⁰. Lightly coat bottom of small pan with oil & heat at medium temperature. Add garlic, cook 2 minutes. Remove from heat, stir in next 5 ingredients. Return to heat, simmer 2 to 3 minutes, set aside. Wash fish and trim. Set in oiled baking dish and score deep diagonal slashes 2 inches apart. Spoon sauce over top. Bake 10 minutes per pound, basting often, until fish flakes when tested with fork; add olives in the last 10 minutes Garnish with lemon slices.
