Chicken breasts (4-5 Costco size), cooked & cubed (or 2 cans white chicken)
1 pkg. (16oz.) bow tie pasta, cooked & cooled
1/4 cup chopped green onion
1 bag baby spinach leaves
1 red pepper, chopped finely
1 yellow pepper, chopped finely
1/2 cup sugared sliced almonds*
1/2 cup oil
1/3 cup soy sauce
1/3 cup wine vinegar
1/4 cup sesame seeds
3 Tbsp. sugar
1 tsp. salt
dash pepper

Directions:

DRESSING: Mix oil, soy sauce, vinegar, sesame seeds, 3 Tbsp. sugar, salt and pepper together.
SUGARED ALMONDS: Melt 3 Tbsp. sugar in a pan. Add almonds to coat. Cool on foil.
Mix together rest of ingredients in a bowl. Just before serving, add dressing.

If pasta is cooked ahead of time, store in a baggie coated with 2 tsp. oil to keep it from sticking together.
