Ingredients:  
1 - 2 fresh zucchini, washed and cubed into 1/2 inch cubes; 3 cups water; 2 lbs kielbasa (sliced) or other type of smoked sausage; 2 large onions, chopped coarsely; 1 garlic bulb chopped coarsely; 3 lbs fresh tomatoes, diced (or canned if you must, 4 14-oz can stewed); oregano, salt, pepper to taste

Directions:
Saute onions, garlic and zucchini in a Dutch oven with olive oil. Add the tomatoes and water. Simmer for 10 minutes. Add kielbasa slices.

Cook for only about 5-10 minutes and serve with warm cheese or garlic bread.
