3 large sweet potatoes
4 Tbsp. butter (1/2 stick)
2 eggs
1/3 cup evaporated milk
1 tsp. vanilla
1/2 cup sugar

TOPPING:
1/3 cup butter, melted and cooled
1 cup brown sugar
1/2 cup flour

Directions:
Directions:
Bake sweet potatoes at 350º until tender, approximately 45 min. to 1 hour. Remove outer skins and mash the potatoes. Combine potatoes, butter, eggs, evaporated milk, vanilla, and sugar in a mixer and mix until smooth.
Spread in a baking dish. Mix the topping ingredients and spread over potatoes. Bake at 350º for 30 minutes or until hot.
