4 1/2 cups sugar
1 cup corn starch
2 tsp cinnamon
1/4 tsp nutmeg
3 T Lemon Juice
5 1/2 - 6 1/2 lbs apples peeled, cored, and sliced.

Directions:
Directions:
In large sauce pan blend first 4 ingredients and 1 tsp salt. Stir in 10 cups water. cook and stir till thickened and bubbly. Add lemon juice.

Pack apples in hot jars leaving 1" head space. Fill jars with hot syrup. Use spatula to distribute syrup throughout far. Clean mouth of jars and put lids on.

Process in boiling water
Pints - 15 minutes
Quarts - 20 minutes

Do not overall fill as I had trouble with the syrup spilling out. Great for making apple pie or apple crisp or apple cobbler.
