1 whole fresh large breasted plump chicken
1 med white onion-whole1 tsp.black pepper
1 tsp. salt1 tsp. rubbed sage
2 cups H2O

1pkg. Annies frozen dumplings-(Wal-Mart)
1 can Swansons chicken broth
X amt.fresh chicken liquor
X amt. deboned chicken
X amt. chicken organs
1 tsp. salt
1 tsp. black pepper
1 tsp. rubbed sage
X amt. H20

Step 1):

-Wash chicken thoroughly,leave skin,remove onion
-cut and discard neck,skin around neck,tail and
any added chunks of fat or skin
-rub chicken with sage,pepper and salt
-put chicken w onion in cavity in crock pot
-add 2 c. H2O
-place liver and heart on top of chicken
-cook on low overnight
-cool in crock overnight next day

Step 2):

-place cold chicken and organs on a plate
-skim off fat from chicken and liquor
-save all gel& broth& organs
-remove all skin from chicken-discard
-remove both breasts-slice/chop for sanwiches
or chicken entree's-fridge or freeze
-debone remaining chicken entirely-chop as needed

Step 3);

-in a VERY large pot(8 qts.)
-add gel,liquor,H2O,pepper,sage,salt,swansons
deboned chicken and diced organs
-bring to a boil,with a H2O level=to3/4 pot
-began to slowly add frozen dumplings at a rate
where pot remains at a boil
-stir w a wooden spoon
-low boil for~20 MIN
-NOTE: Mixture will THICKEN upon cooling
-NOTE:H2O amt.Salt amt and dumpling amt
(use about 2/3 of the pkg.) will determine desired
-serve some now-fridge or freeze the rest for later
