1 large eggplant
3 slices breadd
1 large onion
3 T salad oil
1/2 jar chopped pimento
1/2 cup pecans
2 eggs

Directions:
Directions:
Peal eggplant. Slice and soak in salt water for 10 minutes. Put in fresh water and boil till tender. Drain. Moisten 3 slices bread with 1/2 cup water. Chop 1 large onion and saute in 3 T salad oil. Add 1/2 jar chopped pimentos and 1/2 cup pecans. Mash eggplant, mix in soft bread, onion, pimentos, and 2 eggs. Season with salt and pepper. Put in casserole cover with crushed crackersl Sprinkle with melted butter. Bake 350º 40 minutes.
