4 cups tomato juice from can or squeezo
1 onion minced
1 green pepper, minced
2 pieces of bread
1 cucumber chopped
2 cups chopped tomatoes
1 cup chopped steamed carrots
2 green onions chopped
1 garlic clove minced
3 T fresh lemon juice
2 T red wine vinegar
1 tsp dried tarragon
1 tsp dried basil
1/4 cup chopped fresh parsley
1 tsp white sugar
salt and pepper to taste

Directions:

1. in a blender or food processor, combine tomato juice, onion, bread, bell pepper, cucumber, tomatoes, green onions, garlic, lemon juice, red wine vinegar, tarragon, basil, parsley, sugar, salt, and pepper. Blend until well-combined, but still slightly chunky. Chill at least 2 hours before serving.

Can be frozen.

10 servings. Preparation time: 20 minutes.
