2 lbs. squash
1/4 cup chopped onion
1 cup cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1 pkg. (8 oz.) seasoned stuffing mix
1/2 cup butter

Directions:
Directions:
Boil squash and onion for about 3 minutes in salted water. (Squash must still be a little crisp.) Drain. Combine soup and sour cream. Stir in carrots, squash, and onions; and salt to taste. Combine stuffing mix with butter. Spread half the stuffing mix in bottom of 12x7x2” baking dish. Spoon vegetable mixture on top. Sprinkle with remainder of stuffing mix on top. Bake at 350º for 25 to 30 minutes.
