Ingredients: 3 loaves white bread 1 1/2 onion, chopped fine (about 1 1/4 cup) bag of celery hearts chopped fine ( about 1 1/2 cups) 2 sticks margarine 32 oz. chicken broth plus 1-15 oz. can chicken broth 1 1/8 tbsp. poultry seasoning 1 tsp. sage salt & pepper to taste 5 eggs

Directions:Saute' onions and celery together in 2 sticks of margarine. Add the poultry, sage, salt & pepper. Cook until veggies are tender. Set aside to cool slightly. Mean while in a extra large mixing bowl break bread into small pieces, leaving the heels out. Pour the veggie and margarine mixture in the bowl with the bread. Add the eggs. This is a recipe that calls for getting your hands dirty. Begin pouring the 32 oz. chicken broth onto the bread mixture, start mixing with your hands. The consistency needs to be very moist, but not watery. You will use all of the 32 oz. & most of the 15 oz.; saving some for the top of the dressing while cooking. Place in sprayed 9x13in. pan plus 1 small 8x8 in pan. Bake 350º covered for 45 min. pouring the liquid on top as needed. Take foil off and continue to cook until lightly brown and has a nice bounce to the touch. |
