7-9 lb. shoulder pork roast
12 cloves garlic
Kosher salt
pepper
6 lemons, juiced
4 T. olive oil
red pepper flakes

Directions:
Directions:
The night before cooking, score fat of the roast and insert garlic slivers into meat. Next morning, preheat oven to 450º. Place roast into roasting pan with rack, bake uncovered for 30-40 minutes to brown.

Turn oven to 250º. Remove roast from oven and season with pepper and salt. Mix lemon juice, olive oil and red pepper flakes with whisk. Return roast to roasting pan and pour lemon juice mixture over meat.

Cover and cook at 250º for approximately 10-12 hours. Do not open the oven during cooking!ººº
