2 packages mild pork breakfast sausage
1 c. chopped celery
2/3 c. finely chopped onion

4 - 5 tsp Bell's Poultry Seasoning
olive oil
2 - 3 cans chicken broth

Directions:
Directions:
In large bowl, put in 2 bags of bread cubes. Set aside.

Brown sausage, when cooked, add it to large bowl along with pan drippings. In fresh pan, cook celery and onion in olive oil, when cooked, add it to the large bowl. Mix well.

Add 2 - 3 cans of chicken broth, mix well with your hands. Cubes should be moist.

Add Bell's Poultry Seasoning to taste, 4 - 5 teaspoons. Mix thoroughly.

Bake at 350º in two covered casserole dishes, for 45 minutes. You can remove the covering for the last ten minutes, to crisp up the top.

You can prepare this ahead and refrigerate. Bake in the last hour before the meal is served

Personal Notes:
Personal Notes:
In the Sherman family, the men prepare the Thanksgiving turkey and stuffing. This New England stuffing recipe is the way Steve's father always made it. Raised in Fall River, Massachusetts, Ernie Sherman believed in using plenty of Bell's Seasoning! His stuffing was "powerful stuff".
