2 c. white sugar
4 eggs
1 1/2 c. salad oil
2 c. grated carrots
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
Frosting:
1 lb. powdered sugar
1/2 c. butter
8 oz. cream cheese
2 tsp. vanilla

Directions:
Directions:
Mix: sugar and eggs. Add: salad oil, carrots, flour, soda, salt and cinnamon.
Beat: till blended and pour in a 9x13 greased and floured pan. Bake: at 350º for 45-50 minutes
Frosting:
Combine and beat for 8 minutes the powdered sugar, butter, cream cheese, and vanilla. Frost cooled cake.

This is a very moist cake. I generally can't be bothered to grate that many carrots, so I pop the oil into the blender and add carrots until I get 3 1/2 cups (the total of both) and blend them up that way.
