4 tsp. kosher salt
2 tsp. paprika
˝ tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
˝ tsp. unsalted garlic powder
˝ tsp. black pepper
2 cloves garlic
1 large roasting chicken
1 onion, sliced

In small bowl combine first 7 ingredients. Remove any giblets from chicken and clean the cavity. Rub spice mixture into the chicken. Place in re-sealable bag and refrigerate overnight. If you’re in a real hurry, don’t bother to refrigerate overnight. When ready to cook, put onion slices on bottom of crock pot. Place garlic cloves in cavity of chicken. Put chicken on top of onions in crock pot. No liquid is needed, as the chicken will make its own juices. Cook on low for 4 hours.

So easy and really delicious. For variety, omit onion and stuff a quartered lemon into the chicken cavity, and then use another lemon, thickly sliced, on the bottom on the crock pot to place chicken on.
