1 lb. lean ground beef or ground turkey
2 eggs
1 cup gluten-free bread crumbs
¼ cup finely chopped onion (reconstituted minced onion works great here)
1 T. Italian seasoning
1 (14 oz.) jar marinara sauce, divided into 8 oz an 6 oz portions, any flavor you like

Preheat oven to 350⁰. In a large bowl, mix all ingredients except marinara sauce. Add 8 oz. portion of marinara sauce and mix well. Press mixture into ungreased loaf pan. Bake for 40 minutes. Pour 6 oz. portion of marinara sauce over meatloaf, and spread evenly. Bake an additional 15 - 20 minutes or until meat is well-browned and firm. Let stand 10 minutes before serving.
