4 (7 oz.) cans whole green chilies
1 lb. cheddar cheese, shredded
1 lb. Monterey Jack cheese, shredded
4 eggs
1 tsp. salt
1 tsp. pepper
1 (12 oz.) can evaporated milk
2 (8 oz.) cans tomato sauce

Directions:
Directions:
Remove seeds from chilies and flatten them out. Cover bottom of 9 x 13 Pyrex pan with half of the chilies. Next, cover chilies with cheddar cheese. Then layer remaining chilies and cover with Monterey Jack cheese. Separate eggs and beat whites and yolks separately. Add salt and pepper to yolks. Add evaporated milk to whites and mix. Fold yolk mixture into whites. Pour egg mixture over chilies and cheese. Bake at 325⁰ for 45 minutes. Remove from oven and spread tomato sauce over top. Return to oven and bake for an additional 30 minutes.
