6 eggs (you can use mainly egg whites, with some yolks for color)
¼ cup flour
½ tsp. baking powder
½ lb. Monterey Jack cheese, grated
½ pt. cottage cheese (1 cup)

Directions:
Directions:
Preheat oven to 350⁰. Beat eggs. Add flour, baking powder, grated cheese and cottage cheese. Stir. Pour into 9" x 9" Pyrex pan. Bake for 1 hour, or until golden.

I love to eat this for breakfast, lunch or dinner. My mom sometimes makes twice as much, for brunch when company comes.
