1/2 box (1/2 lb) elbow noodles
6 T butter, divided
5 T flour
3 cups milk
8 oz grated sharp cheddar cheese, reserve 1/4 cup for topping
salt and pepper
1/4 tsp cayenne pepper
1/2 cup seasoned breadcrumbs

Directions:

Cook noodles according to package directions, undercooking by a couple minutes of al dente.Use 1 T butter to grease a 9x13 pan. In a small bowl, combine the breadcrumbs with 1/4 cup cheese. In a large pan, melt 5 T butter and combine with the flour. Stir for 2-3 minutes - don't let the mixture brown. Whisk in 3 cups of milk and stir constantly until thick and bubbling. Remove from heat and add in the cheese and cayenne pepper. Add salt and pepper to taste. Pour into greased pan and top with breadcrumb mixture. Bake uncovered for 25 minutes or until hot and bubbling.

*For a richer taste, use a combination of cheeses: Gruyere, Fontina, smoked mozzarella, parmesan,etc...DON'T use reduced fat cheese though! You will notice a lack of flavor.

* For a spicier mac n cheese, add some spices to the breadcrumbs: cayenne pepper, chili powder, garlic powder, etc...

*For a lighter mac n cheese, substitute 1/2 the milk with chicken broth and use 2% milk.
