8 large red potatoes
3 tbsp. butter
1 onion, chopped
2 cloves garlic, chopped
1 (10.75 oz.) can condensed cream of broccoli soup
1 (10.75 oz.) can condensed cream of celery soup
1 cup milk
salt & pepper to taste
4 cups shredded cheddar cheese

Butter a large baking dish. Wash and peel the potatoes so that only some of the peel is left on the potatoes. Cut into thin slices. Place the potatoes in buttered casserole dish. Melt the butter in a large pot and cook the onion and garlic until translucent. Stir in both soups, milk, salt, pepper and about 1/2 of the cheese. Cook on medium-low until the cheese has melted. Pour the mixture over the potatoes and top with the remaining cheese. cover with foil and bake in a pre-heated 350 degree oven for 50-60 min. Uncover and bake 10-15 min. more until the cheese has browned.
