2 cups small fresh broccoli flowerets
1 1/2 cups small fresh cauliflower
6-(1 oz) slices french bread cut in 1/2 inch cubes
Vegetable cooking spray
3/4 cup (3 oz) shredded reduced fat sharp cheddar cheese - divided
1 cup 1% low fat milk
2 - (8oz) cartons frozen egg substitute - thawed
1/4 c thinly sliced green onoins
1/8 tsp dry mustard
1/4 tsp salt
1/8 tsp ground red pepper
6 thin slicesunpeeled tomatoes
1 1/2 tsp grated parmesan cheese
black pepper (optional)

Directions:
Directions:
Arrange broccoli & cauliflower in a vegetable steamer and place over boiling water. Cover & steam for 5 minutes or until crisp-tender. Drain-plunge into cold water and drain again. Arrange bread cubes evenly in the bottom of an 11 x 7 x 2 inch baking dish coated with cooking spray. Top with 1/2 cup cheddar cheese, arrange brococcoli & cauliflower on top of cheese. Combine milk, egg substitute, green onions, salt, dry mustard & red pepper; stir well pour over vegetables. Cove with aluminum foil coated with cooking spray chill 1 hour. Cut 10 1 inch slits in foil. Bake at 350 F for 8 minutes; let cool 5 minutes; yield 6 servings
