Molly's Strawberry Cheesecake Recipe

CRUST (makes one)
2 cups crushed graham crackers
1 tsp cinnamon
1/3 cup melted butter
¼ cup sugar (optional)

FILLING (makes 2)
4 eggs
3 - 8 oz packages of cream cheese
1 cup sugar
½ tsp salt
2 tsp vanilla
3 cups sour cream
1 cup riccotta cheese (optional)

STRAWBERRY GLAZE (makes one)
2 pints fresh strawberries
¾ cups sugar
1 ½ tbsp cornstarch
Juice of half a lemon
5 drops red food coloring

Directions:

CRUST
Mix ingredients together. Place in 9 X 9 cake pan
Pack on walls and bottom of pan. Bake 10 minutes
At 350 degrees.

FILLING
Beat eggs, add cream cheese, beat until smooth.
Mix in the rest of the ingredients. Pour over crust.
Bake at 350 for 35 min. Cool and chill for 4 – 5 hours

GLAZE
Place 1 cup strawberries in the blender, cover and blend until pureed.
Arrange dry remaining whole or halved strawberries on top of cheese
cake and set aside. Place sugar and cornstarch in a small saucepan; add strawberry puree slowly; then add lemon juice and red food coloring. Cook until thick and mixture begins to boil. DO NOT over cook! Pour glaze over strawberries.
