1 3 to 4 lb chicken, cut-up, 1/2 cup butter or margarine, 1/4 cup dried bread crumbs, 1/4 cup cornmeal 1/2 tsp salt and pepper, 8 small potatoes, 8 medium carots, chopped parsley to garnish.

About 1 1/2 hours before serving. Preheat oven to 400º. Place butter or margarine in a 13 x 9 x 2 baking pan in oven to melt. In a pie plate mix bread crumbs, cornmeal, salt and pepper. Use to coat chicken well. Place chicken in melted butter, roll potatoes and carrots in melted butter and arrange around chicken. Bake uncovered 45 minutes, turn over chicken, potatoes and carrots and bake 20 minutes more. Sprinkle potatoes with parsley.
