Ingredients:  
Mix together: 3 eggs, 2 c. sugar, 1c. oil
Add: 3c. flour,1tsp. baking soda,1 tsp. salt,1/2 tsp. baking powder, 2 tsp. cinnamon
Stir in: 2c. grated zucchini, 3 tsp. vanilla, 1/2 c. nuts(optional)
Bake in 2 greased loaf pans at 350 for 50 minutes
