8 oz. fully-cooked smoked sausage
1 med. onion, chopped
1 T. minced garlic
6 c. chicken broth
3 med. Yukon Gold Potatoes
12 oz. fresh kale (8 c.)
crushed red pepper

Directions:
Directions:
Heat 5-qt. pot over med-high heat. Add sausage (sliced); sauté 5 min. or until brown. Add onion and garlic; sauté 3 min. or until onion starts to soften. Add broth and bring to a boil. Stir in potatoes (diced ˝" pieces) and kale (chopped with stems removed). Simmer, partially covered, 10-12 minutes or until vegetables are tender. Serve with crushed red pepper (optional) if desired.

If you use reduced fat turkey sausage, this recipe is 202 calories per serving. Great on a cold, snowy day. Good with cornbread but that blows the low calorie thing.
