6 oz spinach (a bag of baby spinach is perfect)
1 (12 ounce) can evaporated milk
2 T butter
3 T flour
4-6 oz shredded pepper Jack cheese (or habanero cheese for extra spicy dip)
4-6 oz shredded sharp cheddar
Cayenne pepper to taste

Steam spinach. Let cool, drain off excess water, and chop up. Put aside and let cool.

In a small sauce pan, melt butter and whisk in flour to make a paste. Slowly whisk in evaporated milk. Let thicken over low heat - stirring often. Add cheese 1 handful at a time. Once all cheese is melted, stir in spinach and a couple shakes of cayenne pepper (more if you really like it spicy).
