4 eggs, well beaten
5-7 ripe bananas, mashed
3-⅓ c. sifted plain flour
1½ tsp. salt; 2 tsp. soda
1 tsp. vanilla; 1 c. canola oil; 3 c. sugar
1 c. chopped pecans
⅔ c. water

Directions:
Directions:
Preheat oven 325°. You will need 2 -10" x 5" loaf pans. Combine the first 5 ingredients and mix well. Add the flour, salt, soda to mixture and stir well; add in vanilla and nuts - stir well. Spray the loaf pans with Pam and dust with flour; pour in batter and bake 1 hour and 10 minutes. Use toothpick to test if done. Remove from oven and let set 5 minutes before taking cake from pans. Cool. Can freeze one or both.
