¾ c. vinegar
¾ c. sugar
1 T. water
1 tsp. salt
½ tsp. pepper
1 (17oz.) can small peas, drained
1 (17oz.) can shoe-peg corn, drained
1 ( 4 oz.) can pimento
1 c. finely chopped onion
1 c. finely chopped celery

Directions:
Directions:
Combine vinegar, sugar, water, salt and pepper in pan and boil for 1 minute - cool. Combine peas (Le Seur peas are best), corn, pimento, onion and celery in a bowl and toss lightly. Pour marinade over the vegetables and stir. Cover and refrigerate overnight.
