Crust:
4 eggs
1 c. water
1 stick butter
1 c. all purpose flour
Cool Whip (regular or sugar free)
chocolate syrup (regular or sugar free)
Filling:
2 c. of milk
1 (8 oz.) pkg. cream cheese
1 lg. pkg. instant vanilla pudding (reg. or sugar free)

Directions:
Directions:
Crust: Heat water & butter until it boils. Add flour (you can use wheat or almond flour) then remove from heat. Add one egg at a time; beat well. Pour into a 9x13 greased dish. Bake at 350º until puffy and lightly browned. Cool. For filling: In a mixer blend milk, cream cheese and pudding. Set aside. When crust has cooled, add pudding mixture to crust; then add Cool Whip over pudding filling. Drizzle with chocolate syrup.

This Chocolate Éclair Cake recipe is from my daughter, Melissa. Paul loves this cake for dessert. He is diabetic so Melissa modified recipe to make it sugar free. You can use sugar free pudding, cool whip, chocolate syrup.
