2 ½ lbs. Idaho potatoes, thinly sliced
2 carrots, shredded
5 scallions, chopped
1 T. fresh thyme leaves
salt and pepper
4 T. butter, melted

Directions:
Directions:
Heat oven to 450⁰. In large bowl, toss sliced potatoes, shredded carrots, chopped scallions and thyme. Season, if you wish, with salt and pepper. GENEROUSLY butter a 9" pie plate. Layer potatoes in a circular pattern, brushing each layer with additional butter. Cover with foil and place another pie plate on top. Weigh plate down with pie weights. Bake for 50 minutes. Remove foil. Bake 20 minutes more, or until brown. Allow the galette to stand 5 minutes before removing from pie plate. Invert onto serving plate and serve! Makes 8 servings.
