Lemon Bars (GF) Recipe

1 cup gluten-free flour blend (I use Featherlight Flour by Authentic Foods®)
1/3 tsp. xanthan gum
1/4 cup confectioner’s sugar
1/2 cup (1 stick) butter or margarine, softened
2 tsp. vanilla

3 eggs, lightly beaten
3/4 cups sugar
2 T. gluten-free flour
1/3 cup fresh lemon juice
2 tsp. grated lemon peel

Preheat oven to 350⁰. To make crust: In a medium bowl, combine all crust ingredients to form a soft dough. Press onto the bottom of an 8-inch pan which has been rubbed with vegetable oil or sprayed with a vegetable oil cooking spray. Bake 20 minutes. To make topping: In a medium bowl, combine eggs with sugar. In a small bowl, blend remaining topping ingredients. Add this to the egg mixture, stirring gently. Pour onto hot crust and bake an additional 25 minutes or until filling is set. Cool completely on wire rack. Cut and serve.
