Ingredients: Crust: 1/3 (14 oz.) box cinnamon graham crackers (i.e., 8 4-part crackers) 2 T. sugar 1/3 cup butter, melted
Topping: 1 cup sour cream 1/4 cup sugar 1 tsp. vanilla
Filling: 12 oz. Philadelphia® cream cheese, at room temperature 3/4 cup sugar 2 eggs 2 tsp. vanilla extract 1 tsp. lemon juice

Directions:For crust: Take one package of cinnamon graham crackers (i.e., 1/3 of a box) and finely crush in a sealed plastic bag with a rolling pin until crackers are of a smooth consistency. Mix with 2 tablespoons sugar in a 9” pie pan. Add completely melted butter and mix with crumbs to form crust. Pat into a crust and set aside. For filling: Mix “filling” ingredients together using a hand mixer until smooth. Pour into pie crust and bake in pre-heated oven at 300⁰ for 40 minutes. Remove from oven and cool for 10 minutes. For topping: While cheesecake is cooling, mix the “topping” ingredients together. Pour topping mixture over cheesecake and bake for 5 minutes more. Remove from oven and place on pot holder in the refrigerator. Chill at least 5 hours before serving. Serving ideas: You could put fresh raspberries or strawberries on top when you serve it. |
