6 thin slices of ham
6 eggs
1 cup shredded cheese
1 tbsp. chopped chives, green onions, salsa or any other topping. (optional)
salt and pepper

Directions:
Directions:
Preheat oven to 400º. Coat a muffin pan with cooking spray. Line each muffin cup with 1 slice of ham, then break 1 egg into ham in each lined cup. Sprinkle with salt, pepper and cover with cheese. Bake for 15 minutes, or until cheese bubbles and edges of ham begin to brown. Serve with desired toppings.
