4 c. bread cubes no crust. (Usually about 8 slices of bread)
1 lb. bacon, cooked, crumbled (I use about 8-10 slices)
1/2 lb. whole fresh button mushrooms
1/2 lb sharp shredded cheddar cheese or 4 cheese Mexican
8 eggs
4 c milk
1/2 tsp. salt
2 tsp. mustard
several dashes of cholula sauce or tabasco
butter

In a 9x13 baking dish, butter the dish.
Place 1/2 of the bread cubes in casserole. Layer 1/2 of the cheese and bacon. Repeat for a 2nd layer and dot with butter. Arrange mushrooms on top of dish..

Beat eggs, milk, mustard, salt, and dash of hot sauce.

Pour over mixture.

Set casserole in a shallow pan of water in the oven.

Bake at 300º F for 1 1/2 hours. You may need to replace water as it evaporates. If you have a convection oven this is not necessary.

Caution!!!! Do not bake in oven from 9 pm till 4 am. This technique doesn't work and you will have to start over again at 6 am. You may say I know this from experience Uncle Chuck!!!!

This can be cooked the night before and rewarmed the next morning by putting it in the oven in the same fashion that you had cooked it the night before. Careful not to get the top too brown. I have reduced the cheese by half but the recipe calls for 1 #. Also, 8-10 slices of bacon is fine which is about 12 ounces. This was Janet's recipe. The only changes made were that I added an extra egg and the cholula sauce to it.
