4 thick cut slices of bacon cut into 3 inch strips
2 tbsp unsalted butte
1 large onion chopped
2 carrots chopped
2 celery stalks chopped
3 garlic cloves minced
1/3 cup flour
1 cup pale ale
1 tbsp Worcestershire sauce
2 cups milk
2 cups chicken broth
1 1/4 lb shredded sharp cheddar cheese
salt
pepper
toasted croutons

In dutch oven over medium heat cook bacon for 8 minutes. Drain on paper towels. Discard all but 2 tbsp fat in pot. Reduce heat to medium and melt butter. Add onions, carrots, and celery. Cook covered for 20 minutes. Add garlic and cook one minute. Stir occasionally for 3-4 minutes and then add ale and cook and stir for 2-3 more minutes. Add Worcestershire, milk, and broth. Bring to a simmer and cook for 12 minutes. Puree with an immersion blender. Add cheese by the handfuls and stir constantly. Do NOT boil. Ladle soup into bowls and garnish with bacon and croutons.
