2 c. buttermilk (nonfat)
4 c. flour
1/2 c. sugar
1/2 tsp. salt
1 tsp. baking soda
2 Tbsp. butter
1 c. raisins
2 tsp. caraway seeds (optional)

Topping:
1 Tbsp. butter, melted
2 tsp. sugar


Directions:
Directions:
Sift dry ingredients into a bowl. Add butter, incorporating with a pastry blender. Add caraway seeds and raisins, mixing lightly with a fork. Add buttermilk and stir with a fork. Do not overbeat. Put in a greased 9 inch round cake pan. Pour melted butter over the top and sprinkle with 2 teaspoons of sugar. Bake at 375 degrees for ten minutes, then lower oven temperature to 350 degrees for 50 minutes.
