4 oz crumbled feta cheese
8 oz. black olives
8 oz. stuffed green pimento olives
3 cloves garlic
2 tbsp Extra Virgin Olive Oil
2 tbsp red wine vinegar
1 small firm tomato- optional

Directions:
Directions:
Finley mince garlic. Place garlic, olives, oil and vinegar in a food processor and pulse until you reach a course, yet scoopable, consistency. Remove from processor and transfer to a bowl. (you may also hand chop if needed) Gently fold in feta cheese, do not overmix . If desired, chop tomato and add to dip. **** this dip last for weeks in the fridge if your omit the tomato.

My most requested recipe, this dip is great served with pita chips, toasted baguette rounds or any whole grain cracker. I usually made a double batch because its also good over pasta, in pasta salad and served over any type of grilled meat or fish.
** canned black pearl olives and stuffed green olives in a glass jar work just as well as fancy deli olives.
