2 pkg. frozen chopped spinach
4 T. butter
2 T. flour
2 T. chopped onion
1/2 c. evaporated milk
1/2 c. vegetable liquid (drained from spinach)
1/2 tsp. black pepper
3/4 tsp celery salt
3/4 tsp garlic salt
6 oz. cheddar cheese diced or grated
1 tsp. Worcestershire Sauce
Red pepper to taste

Cook spinach, drain and reserve liquid. Melt butter over low heat, add flour and blend. Add onion and cook until soft but not brown. Add liquids; milk and veggie juice, stirring constantly to avoid lumps. Cook til thick, stirring. Add seasoning and cheese. Stir until melted. Combine with spinach. Place in casserole and bake at 350 degrees for about 30-45 minutes. You can put cheese or bread crumbs on top and bake 10 minutes longer.
NOTE: This is really better to let sit overnight. I always have some in freezer. You can also double or triple this recipe, it freezes well and is better if you let it set in refrigerator before you cook.
