Directions:Homemade Egg Noodles; work eggs into flour until well absorbed and dry. Add flour as need. Roll out mixture on to a floured work surface. Roll it out as thin as possible, the thickness of two sticks of gum stacked. Cut into thin strips about 2 inches by 1/8 inch. A pizza cutter works great. Let the noodles dry for an hour or so. I use a baking rack. Once dry add the to the simmering soup at least 30 minutes before serving.
Soup: Saute chopped onion in a bit of butter or olive oil. Then fill pot with remaining ingredients and simmer for at least one hour. The longer it simmers the better it will taste. |

Notes: This is our Nanny Holly's family recipe for Chicken Soup. It is the best I've had and I look forward to it every time she makes it. The homemade egg noodles make this soup a real treat.
