Homemade Egg Noodles
1 1/4 c. flour
3/4 tsp. salt
2 eggs

Chicken Noodle Soup:
1 cup cooked chicken
1 cup sliced carrots
1/2 cup chopped onion
1 teaspoon parsley flakes
1 teaspoon thyme
1/4 teaspoon black pepper
2 cloves garlic- finely chopped
7 cups chicken broth

Homemade Egg Noodles;
work eggs into flour until well absorbed and dry. Add flour as need. Roll out mixture on to a floured work surface. Roll it out as thin as possible, the thickness of two sticks of gum stacked. Cut into thin strips about 2 inches by 1/8 inch. A pizza cutter works great. Let the noodles dry for an hour or so. I use a baking rack. Once dry add the to the simmering soup at least 30 minutes before serving.

Soup:
Saute chopped onion in a bit of butter or olive oil. Then fill pot with remaining ingredients and simmer for at least one hour. The longer it simmers the better it will taste.

This is our Nanny Holly's family recipe for Chicken Soup. It is the best I've had and I look forward to it every time she makes it. The homemade egg noodles make this soup a real treat.
