1 can navy beans
1 can cannelloni beans, drained
1 large onion, chopped
1/2 c. unsalted butter
1/4 c. flour
3/4 c. chicken broth
2 c. half and half
1 tsp. Tabasco
1-1/2 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. white pepper
2 (4 oz.) cans mild green chilies, drained
2 lbs. chicken breasts, cooked and diced
1-1/2 c. Monterey Jack Cheese, shredded
1/2 c. sour cream

Directions:
Directions:
In a skillet, cook onion in 2 tbsp. butter until soft, set aside. In large stockpot, melt remaining butter over low heat. Whisk in flour. Cook 3 minutes whisking constantly. Stir in onion. Gradually add broth and half and half, continually whisking. Bring mixture to a boil, reduce heat and simmer 5 minutes or until thickened. Stir Tabasco, chili powder, cumin, salt and pepper. Add beans, chilies, chicken and cheese. Cook over low heat 20 minutes, stirring occasionally. Stir in sour cream. Garnish with coriander sprigs and serve with salsa if desired.
