1 yellow pepper
1 green pepper
1 red pepper
1 small red onion
1 jalepeno
1/2 cup chopped celery
1 can yellow corn
1 can black-eyed peas
1 can black beans

Sauce:
1 cup olive oil
1/4 cup red cider vinegar
1/2 cup sugar

Directions:
Directions:
Chop peppers, onion, jalepeno and celery and put in medium bowl. Drain corn, black-eyed peas and black beans and add to bowl. Stir.

In medium sauce pan, add olive oil, cider vinegar and sugar. Bring to boil until sugar dissolves. Pour mixture over the chopped veggies and stir. Best to let sit overnight (or at least 4 hours) before servings. Serve with corn chips.
