Dressing:
1/4 c extra virgin olive oil
2 tbsp vinegar
2 tbsp sugar

Lettuce or spinach
Celery
Green onions
Mandarin oranges

1/4 c slivered almonds
2 tbsp sugar
1/4 -1/2 c butter

Directions:
Directions:
Sugar the almonds by cooking the sugar and almonds in a pan until the almonds are golden brown, cool on a plate in melted butter.

For the salad tear lettuce or use spinach and top with celery, green onion and mandarin oranges. Add dressing and toss right before serving. Top with sugared almonds.
