10 c. Chicken broth
3 celery stalks sliced
3 large carrots peeled and sliced
1 large onion chopped
1 c. long grain white rice
1 - 1/2 lb. boneless skinless chicken breasts chopped
3 lg eggs
1/2 c. lemon juice
1 tsp. dried oregano

Directions:
Directions:
Brown chicken in the stockpot that will be used for the soup. Combine broth, celery, carrots, and onion in a large stockpot; Bring to a boil.
Add rice and chicken, simmer 15 minutes or until rice is tender.
Combine eggs and lemon juice; gradually add to soup.Stir with a fork until ribbons form. Sprinkle with oregano. Simmer 3 minutes before serving.
Mom's notes - I don't use celery and I increase the rice to 1 1/4 c. Increase the lemon juice to 3/4 c.
