1 Onion chopped
1 1/2 c. plus 1 -2 Tbl. butter flavored oil
10 Potatoes cubed
3 Qts water
2 tsp. salt
1-2 c. all purpose flour
2 QTs. heavy cream
1 lb. bacon crisply cooked and crumbled
Pepper to taste

Directions:
Saute the onion with 1-2 tablespoons of butter flavored oil; set aside. Place potatoes in water and bring to a boil, cook until tender but not falling apart.
Don't drain potatoes. Stir in sautéed onions and salt; set aside. Blend together remaining butter flavored oil and enough flour until consistency is thick and batter-like.
It's important to slowly add the flour and oil mixture to hot potatoes and water so as not to create lumps or break up potatoes too much; mixture will be thick.
Add; cream, bacon and pepper. Gradually heat the soup without boiling the cream. Garnish with cheddar cheese and green onions.
