3 cups green cabbage, chopped
2 apples, red or green, or one of each, cored and chopped
1 carrot, grated
1/2 red pepper, finely chopped
3 green onions, finely sliced
1/3 cup mayonnaise
1/3 cup brown sugar
2 tbsp. apple cider vinegar, or to taste
salt to taste

In a large bowl, mix together all of the ingredients and give it a taste. The goal of this salad is a good amount of acidity to stand up to the fatty pork on the sandwich, or to cleanse your palate as a side dish.

Tip: to save time, chop most of the ingredients in your food processor. To allow the flavors to mix together, put in an airtight container and keep in the fridge for a couple of hours before serving.
