1 tbsp. canola oil
2 onions, finely diced
6 cloves garlic, minced
2 tbsp. Ancho powder
1 tbsp. cumin, ground
1 tsp. black pepper
1 chipotle pepper, chopped
1 cup tomato based sweet chili sauce
1/4 cup brown sugar
1/4 cup cider vinegar
1 tbsp worcestershire sauce
3 lb boneless pork shoulder
6 to 8 crusty buns

Saute onions until translucent. Toss in the garlic, Ancho powder, cumin, pepper and chipotle and stir to combine for about a minute. Add the chili sauce, brown sugar, cider vinegar and worcestershire to the pan and stir. Bring to a boil.

Place pork shoulder in a crockpot. Pour pan sauce over and cook on high 4 hours. Alternatively, place in a roasting pan covered with foil and braise slowly at 325º for 2 hours

When meat is done, pull out of sauce and shred with a couple of forks, putting back in sauce as you go.

**Either use right away, or keep in fridge for 2 days.**

Fill buns with pulled pork, top with apple cabbage slaw.
