6 skinless, boneless chicken breast halves, 1/4 tsp Sal, 1/2 cup roasted red peppers, chopped, 1/2 cup lithe cream cheese, softened, 1/4 cup pesto sauce from a jar, 3/4 cup cornflake cereal, crushed, 3 tbsp chopped parsley, 1/2 paprika

Preheat oven to 350º. Place chicken between 2 sheets heavy duty plastic wrap flatten to 1/4 thickness using a meat mallet, rolling pin or heavy can of vegetables. Sprinkle chicken with salt and pepper, set aside. In bowl combine red peppers, cream cheese and pesto sauce stir until smooth. Spread cheese mixture over chicken breasts. Roll up, jellyroll style; secure with toothpicks. In bowl combine cornflakes, parsley and paprika. Dredge chicken in cereal mixture. Place breasts in large baking dish coated with cooking spray. Bake, uncovered 35 minutes. Remove toothpicks from chicken; cut each roll in slices.
