2 strips bacon, 4 large onion, 2 tbsp brown sugar, 1 tbsp balsamic vinegar, 1 tsp salt, 1/2 pepper, 1/4 sliced almonds, toasted

In skillet over medium high heat cook bacon for 7 minutes or until crisp, drain on paper towels. Let bacon cool; then crumble.Heat oven to 450º. Coat pan 12 x 10 pan with non-sticking cooking spray. Place halved onions with the cut side down. Bake 45 minutes or until tender. Flip onions so that cut sides are up. In a small bowl, combine sugar, vinegar, salt and pepper. Brush brown sugar mixture on onions. Roast 5 minutes or until tender. Sprinkle with roasted almonds and bacon

As halved onions cook, the outer rings shrink, causing the center ones to pop out. To stop this, cut two small x's in the outer ring which allows it to expand
