1 pound can tomatoes
1 10-oz. Can enchilada sauce
1 2 1/2-oz. Can ripe olives, sliced and undrained
1 teaspoon salt
1/4 teaspoon garlic powder
1 egg
1/8 teaspoon pepper
1/4 cup salad oil
1 package frozen corn tortillas, thawed
1 cup small curd cottage cheese
1/2 pound Monterey Jack cheese, thinly sliced
1/2 cup cheddar cheese, shredded
1/2 cup tortilla chips, crushed

1/8 teaspoon pepper
1/4 cup salad oil
1 package frozen corn tortillas, thawed
1 cup small curd cottage cheese
1/2 pound Monterey Jack cheese, thinly sliced
1/2 cup cheddar cheese, shredded
1/2 cup tortilla chips, crushed

Brown meat and onion in fry pan. Blend in tomatoes, enchilada sauce, olives and their liquid, salt, garlic powder, and pepper. Bring to a boil; reduce heat; simmer 20 minutes uncovered. Cut each tortilla in half. Start layering in bottom of casserole with layer of tortillas. Beat cottage cheese with the egg. Spread 1/2 meat sauce over tortillas in greased 3-quart casserole (9x13 inch). Top with 1/2 of jack cheese, 1/2 cottage cheese, 1/2 of the tortilla halves (8). Repeat layers, using 1/3 meat sauce, rest of jack cheese and cottage cheese and tortillas. Spread top with meat sauce. Then top with cheddar cheese and border with tortilla chips. Bake at 350 degrees uncovered until cheese is melted (about 20 minutes).

Makes 4 to 6 servings

1 pound ground beef
1/2 cup chopped celery
1 small onion, diced
1 can cream of mushroom soup
1 4-oz. Can drained, sliced mushrooms
1/2 soup can milk
1 bag frozen tator tots

Brown beef, celery and onion. Mix the soup, mushrooms and milk together with the browned ingredients. Place in casserole. Cover with layer of frozen tater tots. Cook in 350 degree oven for approximately 30 minutes or until done.Serves 6.
